Air fryers: hot-air cooking, oil uptake, acrylamide disagreement, a published critique, and food-safety checks
On this page
An air fryer is a small convection oven: a fan circulates hot air around food. It can create a fried-like texture with relatively little added oil. Whether that improves a meal depends on the food, its preparation, and what cooking method it replaces.[1]
What the lower-fat finding means
A 2015 experiment compared French fries made by air and deep-fat frying under otherwise similar conditions. The air-fried product absorbed substantially less fat, with different texture and sensory properties. It also took longer to produce. This measured the prepared food, rather than weight change, heart disease, or how people compensated elsewhere in their diet.[2]
The starting food matters: a pre-fried product differs from a raw potato. Label and recipe describe that comparison. Replacing oil immersion can change fat uptake; the appliance name cannot describe the whole meal.[2]
Why browned starchy foods raise another question
Acrylamide can form from naturally present sugars and the amino acid asparagine during high-temperature cooking. FDA identifies frying, roasting, and baking as common conditions, while boiling and steaming do not typically produce it. Temperature, time, and the actual food affect its formation. It is not a contaminant unique to air fryers.[3]
One experiment found a large reduction
Sansano and colleagues compared air and deep-oil frying of potatoes at 180°C, including several pretreatments. The abstract reported about 90% less acrylamide with air frying even without pretreatment. That is a result for this particular experiment. It cannot be converted into a promise of 90% less cancer risk or a fixed reduction for every appliance and recipe.[4]
Another comparison did not show a significant method difference
A 2024 potato study compared air, deep, and oven frying after washing or soaking. Its measured average was highest with air frying, but the difference among cooking methods was not statistically significant. The investigators also observed differences with soaking. A highest sample average and a demonstrated difference are not the same result.[5]
The measurements also have a published challenge
A subsequent commentary questioned the analytical measurements, their very low reported levels compared with other literature, and inconsistencies in how sample groups were described. The critique does not provide a new air-frying experiment. It means the contested study should not be used as settled reassurance about low exposure or proof that one appliance is more hazardous.[6]
A full independent analytical reconciliation and any complete author response remain outstanding. The source record therefore keeps the criticism beside the original paper. Counting the experiment and the commentary as two independent studies would misrepresent their relationship.[6]
A chemical measurement is different from a cancer estimate
NCI explains that rodent experiments raise concern about acrylamide, while human dietary studies have not provided consistent evidence of an association with cancer. Human exposure measurement is difficult, and food levels vary widely. These limitations do not establish zero risk; they explain why an air-fryer experiment cannot supply a personal cancer probability.[7]
Practical food properties are more useful than a magic setting
Hong Kong’s Centre for Food Safety advises against excessive temperatures and cooking times and suggests a golden-brown finish for starchy food. It also warns against overloading the basket. These are general cooking principles, rather than one setting that works for every food, load, or machine.[1]
A crisp coating does not establish a safely cooked center
USDA advises checking internal temperature with a food thermometer and following product instructions. Its air-fryer guidance specifically says not to cook raw stuffed breaded chicken breasts in an air fryer. The category matters: a familiar appliance cannot substitute for a validated method on a product that requires another cooking procedure.[8]
External crispness, pre-browning, and a timer are incomplete safety checks. Food size, crowding, and the particular product can affect heating. For suitable raw or precooked meats, USDA directs users to the manufacturer’s instructions, rather than treating the appliance name as proof of adequate cooking.[8]
The appliance needs space, suitable materials and careful cleaning
Place the appliance on a stable surface with the clearance its instructions require; keep cords away from heat. Cheshire Fire and Rescue Service advises avoiding extension leads and loose paper or foil that could obstruct airflow or reach the heater. Switch off after use, let it cool and follow its cleaning instructions. Do not immerse the electrical appliance in water.[9]
Check the model, rather than the brand name alone
For example, a March 2024 US recall identified six Insignia models using the rating label on the underside. It instructed affected owners to stop use and obtain the specified remedy. A product photo or brand name alone does not establish whether a unit matches a notice. Check the exact model against the relevant regulator’s or manufacturer’s current instructions.[11]
Evidence & uncertainty
Less oil uptake has been demonstrated in potato experiments, but the appliance is not a blanket health claim. Studies of acrylamide reach different results, and one frequently cited comparison has a published measurement critique. Long-term human benefit or harm cannot be calculated from these food experiments.[2][5][6]

Does an air fryer make every meal healthy?
Selected-source overview · Independent review pending. Read the evidence context.
No. The observed benefit concerns an actual food and comparator. A food-composition experiment does not establish a long-term health benefit for every meal.[2]

No universal reduction is established. One potato experiment reported a large reduction, while another found no significant difference among methods. Conditions and contested measurements matter.[4][5]

They do not measure cancer in air-fryer users. Acrylamide is a potential hazard, but food measurements and inconsistent human dietary evidence do not establish a personal risk estimate.[7]

No. The chamber study found food-dependent emissions and a contribution from accumulated residues. Use the manufacturer’s cleaning instructions and appropriate kitchen ventilation. Do not dismantle inaccessible electrical parts to imitate a laboratory cleaning procedure.[10][9]

|---|---|
| Air versus deep frying | How much oil enters this food under these conditions?[2] |

| Air-fried versus steamed food | Dry high-temperature cooking and moist cooking create different contaminant conditions.[3] |
Less frying oil does not mean no airborne emissions
A 2026 chamber study tested twelve dishes in one 4.7-liter air fryer. It measured airborne gases and very small particles, then modeled concentrations in a small kitchen. Emissions varied by food; high-fat foods could produce particle concentrations comparable with deep frying. Residues in inaccessible areas after more than seventy uses also increased emissions during empty runs. This supports attention to maintenance and ventilation, not a universal appliance ranking or a measured reduction in lung disease. Public research funding was reported.[10]
